Les Cigognes de Jolys - Jurançon Sec
The High Environmental Value (HVE) guarantees that the agricultural practices used on a whole farm preserve the natural ecosystem and reduce to a minimum the pressure on the environment (soil, water, biodiversity...).
Blend: 40% Gros Manseng, 60% Petit Manseng
Vintage : 2020
Terroir
The Château Jolys with its 40 hectares is one of the biggest châteaux of Jurançon. Its vineyard extends over the superb hillsides of the chapel of Rousse in the heart of the Jurançon AOC vineyard. The vines are planted on silico-clay soils with steep slopes facing the Pyrenees.
This vintage is made from young vines of Petit Manseng facing South/South-East and Gros Manseng facing East; offering balanced and structured musts.
Vinification & Maturing
After de-stemming and a pre-fermentation maceration, the pressing is done gently. After settling, the alcoholic fermentation in stainless steel tanks is done at a controlled temperature. A maturing on lees with regular stirring of the lees gives structure and stability.
Tasting
An intense nose with floral notes of Gros Manseng mixed with fresh exotic fruit notes of Petit Manseng.
A frank and structured attack. The mouth is wrapped around the floral and peach aromatic notes. The intense and fresh finish is underlined by the crunchy pineapple.
Food and wine pairing :
Goat cheese; seafood; sushi; grilled fish; Caesar salad
