Terroir

The Château Jolys with its 40 hectares is one of the biggest châteaux of Jurançon. Its vineyard extends over the superb hillsides of the chapel of Rousse in the heart of the Jurançon AOC vineyard. The vines are planted on silico-clay soils with steep slopes facing the Pyrenees.
The Late Harvest wines come from plots of Petit Manseng facing the Pyrenees. The grapes are protected with nets to keep them on the vine until the end of November. The fohen, a warm south wind, concentrates the aromas offering incomparable grape musts.

Vinification & Maturing 

After manual harvest, the grapes are pressed whole. The juices with low yields are settled and then put in French oak barrels for fermentation. Then follows a 24 months maturation with regular stirring of the lees.

Tasting 

Incomparable nose. The intensity is remarkable, marrying candied fruits to a melted woody taste; where quince, roasted pineapple and spicy notes are mixed.

The mouth is surprisingly present. The voluminous liquor harmonizes perfectly with an intense fruity structure. The finish is remarkable for its length. 

Food and wine pairing : 

Blue cheese, chocolate sweetness or unforgettable digestive.
