Terroir
Château Jolys, with its 40 hectares, is one of the largest châteaux in the Jurançon region. Its vineyards stretch across the stunning hillsides of La Chapelle-de-Rousse, in the heart of the Jurançon AOC wine region.
The vineyards are planted on siliceous-clay soils on steep slopes facing the Pyrenees.
Vinification & Maturing
Our premium Brut sparkling wine is produced using the traditional method.
After gentle pressing, the must undergoes a first fermentation in stainless steel tanks. The second fermentation, which creates the bubbles, takes place in the bottle, followed by 12 months of aging on the lees to develop aromatic complexity.
The wine is then disgorged and topped off with a dosage.

nd a harmonious freshness provided by fine, pleasant bubbles.
