Terroir
The Château Jolys with its 40 hectares is one of the biggest châteaux of Jurançon. Its vineyard extends over the superb hillsides of the chapel of Rousse in the heart of the Jurançon AOC vineyard. The vines are planted on silico-clay soils with steep slopes facing the Pyrenees.
This cuvée comes from the Château's historic Petit Manseng, planted on an exceptional southern exposure. These hillsides are particularly exposed to the Foehn, the warm wind that blows the grapes over the vine.
Vinification & Maturing
After successive selections, the over-concentrated grapes are delicately pressed. The free-run juice is settled and then fermented in temperature-controlled stainless steel vats. The mutage is carried out at the right sugar-alcohol balance according to the tasting. A long maturation on total lees follows with regular stirring.
Tasting
An expressive and complex nose with fresh exotic fruits and floral notes.
A lively and aromatic attack. The liqueur harmonizes in the mouth offering a very balanced and structured wine with a finish on candied mango and gingerbread.

Blue cheese; dark chocolate pie; chicken curry, lemongrass and Thai basil.
