Terroir

The Château Jolys with its 40 hectares is one of the biggest châteaux of Jurançon. Its vineyard extends over the superb hillsides of the chapel of Rousse in the heart of the Jurançon AOC vineyard. The vines are planted on silico-clay soils with steep slopes facing the Pyrenees.
This cuvée comes from the historical Petit Manseng of the Château, planted on an exceptional southern exposure.

Vinification & Maturing

The grapes are delicately pressed and the must is put into French oak barrels for fermentation. The wine stays for many months on the lees with regular stirring. After one year of maturation, the wine is bottled without filtration or fining.

Tasting

An intense nose characterized by its complexity. Ripe, exotic fruits and spicy notes blend perfectly to offer the mark of a great wine.

The mouth is dense with a buttery fatness that is supported by a certain tension. Notes of fresh fruit add to the aromatic palette. The finish is long with a brilliant minerality. A greedy, structured wine, which will become more complex with the years.

Food and wine pairing :

Guinea fowl leg with morels; garbure; fish soup; cheese platter
